Cucumber Salad (오이 무침)
Serves 2 people
Ingredients:
- 1 cucumber, finely sliced
- 1 tbsp salt
- 1 spring onion, finely chopped
- 1 garlic clove, finely chopped
- 1 tbsp of vinegar
- ½ tsp of chilli powder
- 1 tsp of sesame seeds
- ½ tsp of sesame oil
- 1 tsp of sugar
Instructions:
- Cut cucumber into thin slices and sprinkle 1 tbsp of salt, mix well and leave it for 20-30minutes.
- Place cucumber into a colander and remove water by squeezing out as much of water as possible.
- In a medium size bowl, place sliced cucumber and 1 tsp of chilli powder and mix well.
- Add garlic, vinegar, sugar, sesame oil, sesame seeds and then mix with chopped spring onion.
- Serve on a plate as a side dish.
Radish salad(무 생채)
Serves 2 people
Ingredients:
- 1 Raddish, sliced thinly (5cm length)
- 1 tbsp Korean chilli powder
- ½ tbsp of prawn paste
- ½ tbsp of chopped garlic
- ¼ tbsp of chopped ginger
- ½ tbsp vinegar
- ½ tbsp corn syrup
- ¼ tbsp sesame seeds
- ¼ tbsp sesame oil
Instructions:
- Slice radish thinly and soak in cold water to remove the bitterness. When the radish turns translucent, strain the water.
- Put the radish in a bowl and add the chilli powder. Mix until evenly coated. Add the rest of ingredients and mix.
- Serve on a plate as a side dish. Best served cold.
