Mat tang – sugar coated sweet potatoes
Ingredients:
- Serves 4 people
- 2 sweet potatoes
- Vegetable oil
- 1 tbsp dark soy sauce
- 6 tbsp sugar
- 3 tbsp water
- Sesame seeds
Instructions:
- Peel the sweet potatoes and cut diagonally. Soak in the water to remove starch for 30minutes and pat dry with kitchen towel to remove any excess water
- Heat the vegetable oil to around 170’c and deep fry the sweet potatoes until golden brown
- Make sugar syrup by mixing water and sugar in a pot on a low heat and without stirring. Add soy sauce once the syrup is boiling and then turn the heat off
- Add the deep fried sweet potatoes into the syrup and coat it evenly
- Serve on a plate and garnish with sesame seeds
