Mat tang – sugar coated sweet potatoes



  • Serves 4 people
  • 2 sweet potatoes
  • Vegetable oil
  • 1 tbsp dark soy sauce
  • 6 tbsp sugar
  • 3 tbsp water
  • Sesame seeds


  1. Peel the sweet potatoes and cut diagonally. Soak in the water to remove starch for 30minutes and pat dry with kitchen towel to remove any excess water
  2. Heat the vegetable oil to around 170’c and deep fry the sweet potatoes until golden brown
  3. Make sugar syrup by mixing water and sugar in a pot on a low heat and without stirring. Add soy sauce once the syrup is boiling and then turn the heat off
  4. Add the deep fried sweet potatoes into the syrup and coat it evenly
  5. Serve on a plate and garnish with sesame seeds
